This is my version of Japchae or Stir-fried Glass Noodles, it's a savory and sweet Korean noodle-dish.
250 grams Dangmyeon Noodles (Glass Noodles)
1 small Carrot, julienned
1 small Red Bell pepper, julienned
Chinese Cabbage, sliced
2 stalks Green Onions, sliced
1 small can sliced Mushrooms
125 grams Chicken, Pork or Beef
1 Egg, scrambled
1 tsp Garlic, crushed
1 small White/Yellow Onions, sliced
3 tbsp Sesame Oil
6 tbsp Soy Sauce
7 tbsp cup Sugar
Salt & Pepper, to taste
Toasted Sesame Seed
Cooking Oil
Procedure:
1. Combine sugar, soy sauce, sesame oil and a pinch of sesame seeds in a bowl. Mix thoroughly until the sugar is completely dissolved. This is the sauce mixture, set aside.
2. Marinade the meat (chicken, pork or beef) in 2 tbsp of the sauce mixture.
3. Crack one egg, add a pinch of salt, beat it and cook it in a non-stick pan. Sliced it thinly, set aside.
4. In a large pot add water and bring it to boil. Add the glass noodles into the boiling water, cook it for 5-10 minutes, stir it occasionally so it won't stick together. To make sure that the dangmyeon noodles are already cooked, taste it, the noodles should be a bit soft and chewy.
5. Strain the noodles once cooked, rinse it with cold water to stop the cooking process, cut them with kitchen scissors for a few times because the noodles were so long, drizzle 1 tbsp of sesame oil and mix it.
6. Heat your pan, add a little amount of cooking oil, add the meat and stir-fry it until it's cooked, set aside.
7. With the same pan add cooking oil, sauté the garlic, followed by onions, add carrots, red bell pepper, the meat, Chinese cabbage, and green onions.
8. Once the veggies and meat were half-cooked, you can now add the cooked glass noodles, a pinch of salt, black pepper (I prefer a lot this), toasted sesame seeds (leave some for garnishing), and the sauce mixture.
9. Mix it all together, once it's mixed well, you can now serve it, garnish with toasted sesame seeds and sliced egg on top. Enjoy!
Tips & Info:
1. You can buy Dangmyeon Noodles (Glass Noodles, Sweet Potato Starch) in the Asian or Imported Section of large supermarkets. The price of a 500 gram Dangmyeon Noodles is ₱134.
2. The authentic Japchae uses blanched spinach and shiitake mushrooms. I substituted Chinese cabbage and canned button mushrooms because those were the only available.
3. It is best to use beef as the dish's protein because it has a more savory flavor.
